I love eating. I also love cooking. As a gluten and dairy free vegetarian though I sometimes have little to work with and end up eating the same thing week after week. On the hunt for something delicious, healthy, and in my eating range I turned to Pintrest and saw a recipe for a creamy avocado pasta. Um HELLO, I love avocado, I love pasta, I felt this would work out! I added my own twist to it like I always do and it turned out absolutely delicious. Find the original recipe { here. }
My tweaked recipe:
Ingredients:
1 medium sized ripe Avocado
1/2 lemon, juiced
2-3 garlic cloves
1/2 tsp kosher salt, or to taste
1/4 cup Fresh Basil, (optional) {I actually used about a tsp of dried basil and it turned out just fine}
2 tbsp extra virgin olive oil
2 servings/6 oz of your choice of pasta
Freshly ground black pepper, to taste
Red onion
Can of whole peeled tomatoes {Don’t drain the liquid out of the can right away since you need to add some of it to the avocado sauce}
Fresh Spinach
Baby Bella Mushrooms
Blender or Food Processor {Recipe calls for F.P. but I don’t have one of those so I used the puree button on my blender and it worked just as well!}
Directions:
1. Boil your noodles according to the package, I always choose Brown Rice Noodles but any will work.
2. Squeeze lemon juice into the blender, add garlic cloves, and olive oil, blend until smooth.
3. Add pitted avocado plus the basil and salt to the mixture, blend until smooth.
3. Chop the mushrooms and red onion, add to a pan and saute until brown.
4. De-Stem the spinach and saute until dark green.
5. Drain the pasta and add in about 1/4 of the tomato juices from the can, pour sauce over noodles and stir with the stove on low heat.
6. Add in the other veggies and any extra spices that strike your fancy. {I used Chicago Steak Seasoning and Northwoods Fire, both from Penzey’s Spices.}
7. At this point you can add in a protein if you would like, I might add in my Beyond Meat Chicken free strips just for fun!
